Cheese Straws

“a sign of Deep South hospitality”
-from Lucretia, a genteel Southern hostess

8 oz sharp cheddar
1 stick butter, softened but not melted
1 and a half cup flour
generous cayenne pepper
gracious pinch of salt

Cream the butter and cheese together. Blend in remaining ingredients with a wooden spoon or use your hands. Form into desired shapes and press with tines of fork. Bake on ungreased cookie sheet at 350 for about 20 minutes.
